A café shaped by intention, not trends.
More Than Matcha
Maddie’s began with matcha, but it grew through curiosity, care, and countless considered choices. From the coffee we brew to the systems we trust, everything here is selected with purpose. This is a look beyond the cup — into the partners, processes, and values that shape how Maddie’s tastes and feels every day.

Matcha may be the heart of Maddie’s, but it’s only part of the story. Behind every drink is a network of trusted roasters, makers, and tools chosen through research, tasting, and alignment with our values. This page shares the craft, care, and intention that go into everything we serve.

Dark Arts Coffee
Dark Arts is a speciality London roastery with a bold personality and an equally bold approach to coffee. What drew me to Dark Arts isn’t just the flavour, but their commitment to traceable beans and small-batch roasts — coffee that feels alive, not industrial. I love showcasing them as our rotating guest espresso because they bring diversity, craftsmanship, and character to every cup. Their respect for origin and quality mirrors Maddie’s belief in intentional sourcing and honesty in taste.
Brazilian Fazenda Inhame · Local Sussex Roastery
Our House Coffee
Our house coffee comes from a local Sussex roastery dedicated to ethical sourcing and thoughtful craft. Their single-origin Brazilian coffee from Fazenda Inhame — a small family-run farm — delivers warm, comforting notes of hazelnut, milk chocolate, and dried fruit. They invest in long-term relationships with producers and pay above fair-trade minimums, ensuring farmers thrive alongside quality coffee. After extensive cupping and trial brews, this became our house coffee — one that feels as good in origin as it tastes in the cup.
Raw · Organic · Alive
You + I Kombucha
You + I create kombucha that’s clean, lively, and genuinely refreshing. Always organic, raw, and unpasteurised, their kombucha is brewed with finely sourced teas and botanicals — no artificial flavours and minimal sugar. Their sustainability-first approach — organic certification, carbon-neutral delivery, and recyclable packaging — aligns naturally with Maddie’s values.
Cold-Pressed · Plant-Powered · Organic
The Juice Smith
The Juice Smith produces cold-pressed juices made from organic produce and nothing else. No preservatives, no refined sugars, no seed oils — just nutrient-dense juice made to support real wellbeing. After extensive tasting and sourcing checks, The Juice Smith stood out as a partner that delivers transparency, quality, and flavour you can trust.
Precision Craft Behind the Bar
Slayer Espresso
At the backbone of our coffee program is Slayer Espresso — a hand-crafted espresso machine engineered in Seattle. Slayer’s technology allows precise control over extraction, helping baristas highlight the true character of each coffee. Choosing Slayer was an investment in craft and consistency — supporting our belief that great coffee starts with respect for the process.
Because Water Matters
Bluewater Filtration
Water is the foundation of every drink. With Bluewater’s advanced filtration, every cup starts with clean, balanced water that enhances flavour while reducing reliance on single-use plastics. Their SuperiorOsmosis™ technology removes harmful contaminants while preserving essential minerals — better for taste, better for the planet.
